Wayfinder is a Certified Organic vineyard and winery located in the beautiful Margaret River region of Western Australia. We are seeking an experienced Assistant Winemaker to join our small team of skilled and passionate people, dedicated to producing wines at the highest level.
 
This is a unique opportunity to join us as we settle into a stunning new off-grid, gravity-flow winery, which opened for the 2026 vintage. About the Role
As our Assistant Winemaker, you'll support the Winemaker across all aspects of the production cycle — from vintage through to bottling and beyond. Key priorities for this role include managing the winery lab and maintaining meticulous records, hands-on cellar work, and supervising our cellar and seasonal team.
 
This is a varied and rewarding role where you'll:
•	Oversee day-to-day lab operations, including routine chemical analysis, ensuring results are accurate, timely, and consistently recorded
•	Maintain rigorous, audit-ready record keeping across the winery, including analysis logs, wine tracking software, and organic compliance documentation
•	Manage and participate in day-to-day winemaking operations including racking, transfers, filtering, bottling, and barrel work
•	Lead, mentor, and supervise cellar staff and seasonal workers, upholding high standards across the team
•	Contribute to blending, sensory trials, and technical tastings
•	Maintain winery equipment and facilities to excellent working standards
•	Uphold organic certification requirements and sustainability practices
•	Represent Wayfinder at tastings, tours, and industry events

The estate is in the village of Hambledon in Hampshire, with a 220-acre vineyard and 500-tonne winery, producing traditional-method sparkling wines, across 4 tiers. Expansion and improvement plans are well underway with recent capital investment across the wine estate.

Reporting to the Managing Director, the Head Winemaker will drive wine style and quality, shaping the Hambledon portfolio through technical leadership and brand advocacy. Part of the senior management team, this role will be responsible for managing the winery and ensuring excellence across the wine production pipeline. Providing hands-on leadership to the winemaking and laboratory teams, you will champion a proactive and innovative culture for growth and development.    

KEY RESPONSIBILITIES
Winery & Wine Production Management:  
•	Manage the winery and production, overseeing all winemaking activities 
•	Lead, train and mentor the winemaking and laboratory teams, building a high-performance culture and technical capability 
•	Set winemaking styles, technical standards, specifications and production processes
•	Drive wine quality, maintaining rigorous assurance processes, controls, standards and benchmarks 
•	Ensure wines meet regulatory compliance and standards, including HACCP and PDO 
•	Work closely with the Head of Wine Operations to align production plans with sales forecasts and inventory strategy
•	Manage winery budgets, delivering forecasts and reports
•	Maintain accurate and up to date winemaking and production systems and records
•	Operate a safe work environment, ensuring processes are followed and regulatory compliance is met
•	Oversee contract winemaking projects, ensuring clients wines meet agreed specifications and quality standards

Strategic Management & Collaboration: 
•	Work collaboratively with the wine leadership team, ensuring excellence and consistency across the winemaking pipeline
•	Work closely with the Vineyard Manager on harvest decisions and grape specifications
•	Partner with the Head of Wine Operations to ensure seamless execution 
•	Collaborate with commercial and marketing teams to align product with brand strategy and customer expectations 
•	Contribute to capital investment decisions and projects to improve winery efficiency, operations and quality 
•	Represent Hambledon as a brand advocate among trade, media, partners and industry 

Innovation & Continuous Improvement: 
•	Lead new product development and refine wine styles, ensuring Hambledon remains at the forefront of English sparkling innovation  
•	Introduce and embed improvements in efficiency, quality and sustainability
•	Champion sustainable winemaking practices and resource efficiency across the winery, assessing winemaking inputs and processes

<description><![CDATA[Blackcoat ® is a boutique vineyard and winery located in Ellinbank, West Gippsland around one hour from Melbourne. The high density vineyard has approx six hectares planted out of a planned eight to ten hectares, with a focus on Pinot Noir and Chardonnay. The winery’s seventh vintage was picked earlier this year. 

The vineyard is positioned in the elevated (cooler) north facing foothills of the Strzelecki Ranges. Multiple clones of Pinot Noir, Pinot Meunier, Chardonnay, Chenin Blanc and Riesling have been planted on phylloxera resistant rootstock at a high density of just under 7000 vines per hectare. 

The property is 20 hectares in size with sheep/cattle grazing in other areas. A winery has been built onsite containing high quality equipment. A Cellar Door and Cafe is planned and has already been approved for construction by local council.

We are looking for a motivated, focused and passionate person to join us in producing wines of the highest quality. This is a great opportunity for a hands-on person to showcase their superior viticultural and winemaking skills at a unique property in an exciting location.
