Dal Zotto is first and foremost a family…and our team (as well as customers) are part of that family. Two generations now as King Valley grapegrowers and winemakers, it’s been almost 25 years since we decided to explore something different. We introduced the first Australian grown Prosecco to the Australian market, not because we knew it would be a success, but because it’s in our blood and when it runs that deep, you have to give it your best. We released our first Prosecco in 2004 and the rest is history…the Australian public has embraced Prosecco as much as we did. Now we make six different styles of Prosecco, continuing to explore the possibilities and excitement that comes for this wonderful variety.

While Prosecco is far and away the largest proportion of our total 105 acres of vineyard, we also produce a large range of Italian varieties, all of which have found success and are an important part of our story. In 2020, Dal Zotto was awarded the Halliday Wine Companion ‘Dark Horse Winery of the Year’, a clear recognition of the many facets that make up our wine production.

The opportunity has arrived for a new Assistant Winemaker to join our team. This is a new role to supplement our winemaking team as we experience consolidation and growth.

Reporting directly to the Winemaker, you will be responsible for assisting in implementing and supervising all winemaking, laboratory, operational and safety procedures in the winery.

We are a small team with very much a collaborative approach to our craft.

Job Requirements
• Several years winemaking and vintage experience are required with tertiary winemaking qualifications looked upon favorably.
• A good understanding of wine micro-biology and viticulture is essential.
• Great communication skills
• You will be competent carrying out standard small winery cellar procedures and laboratory work and other work as requested by the winemaker.
• Preparing and conducting trials and wine tastings with Winemaker to assist in wine style and blending choices.
• Independently monitoring and maintaining wine within specifications.
• Bringing a winemaker’s perspective and opinion into the laboratory and cellar floor.
• Vintage ferment and operations monitoring and management.
• Assisting in organizing external bottlings and related logistics.
• Excellent time management capabilities in a fast paced and demanding environment.
• Be prepared to work flexible hours and extended shifts when required.
• Physically capable and able to lead and manage workflow
• Attention to detail whilst also leading cellar and vintage staff in SOPs to a high standard
• Able to work under pressure and independently
• Ability to follow OHS polices and promote a safe work environment
• Forklift, confined spaces, chemical handling, and RSA certification will be advantageous.
