Permanent role, perfect for a recent graduate
As an Assistant Winemaker, working across Dorrien Estate and Vinpac (on a six monthly rotation), you will oversee day-to-day winemaking activities.
Working directly with winemaking and operational teams, you will ensure the desired outcome is reached for each batch, in line with the winemaking specifications and styles.

Here is a taste of what you can expect in this role:
Dorrien Estate Vintage
Provide support in areas of operational winemaking, strategic planning , processing capacity management and quality control in the lead up to, during and immediately following the vintage period.
Contribute to pre-vintage planning and preparation.
Assist in the planning, management and supervision of key winemaking processes including yeast culture management, grape processing, clarification/racking, inoculation, fermentation and filtration in accordance with winemaking specifications.
Oversee vintage winemaking activities on the night shift.
Dorrien Estate Wine Production
Contribute to the management of immediate “post vintage winemaking” , such as rack and returns, barrel management, ullage management, assembly of “pre-blends/pack down”, filtration/centrifugation, across all winemaking portfolios/regions.
Ensure efficient prioritisation and scheduling of peak “post-vintage” winemaking workload.
Vinpac Winemaking
Support the Winemaker on bottling sign-off, sparkling wine production, management of New Zealand wines.
Participate in New Product Development (NPD) activities, as well as the making and management of products wine and non-wine based.
Safety, Quality, Environment and Sustainability
Consider environmental sustainability, responsible sourcing, quality and safety requirements when making strategic decisions.
Support the business sustainability strategy by embedding environmental sustainability and responsible sourcing in everything we do.
Ensure best practice winemaking principles and practices are utilised for all winemaking and tank farm operations.

Qualifications

Degree in Wine Science/Oenology or Graduate qualification in Wine Science/Oenology.
Practical experience in the field of winemaking.
Practical understanding of cellar and laboratory operations.
