Job Description
Hollick Estates is an established vineyard, winery, cellar door and restaurant business located in Coonawarra, South Australia, one of Australia’s most recognised Cabernet Sauvignon regions.

We are looking for a motivated, practical and commercially minded Winemaker to join our team and lead day-to-day winemaking and winery production operations.

This is a hands-on role for someone who can manage wine quality from harvest through to bottling, while maintaining strong cellar discipline, accurate records, safe working practices and effective communication with vineyard, sales, finance and management teams.

The successful applicant will have a clear understanding of wine quality, regional style and connection to vineyard, while also being able to make production decisions with regard to sales demand and commercial priorities.

Job Requirements
The ideal candidate will have practical winemaking experience, organisational skills and the ability to work independently or within a small team environment.
- Minimum of 8–10 years’ experience in winemaking operations from harvest through to bottling.
- Relevant tertiary qualifications in winemaking, oenology, wine science or a related discipline.
- Strong technical understanding of fermentation, maturation, blending, stabilisation, filtration and bottling preparation.
- Clear vision of wine style, quality consistency and connection to vineyard and region.
- Ability to manage day-to-day winery and cellar operations, including vintage work, transfers, barrel work, cleaning, sanitation and bottling preparation.
- Practical understanding of WHS, cellar hygiene, safe work practices and site discipline.
- Commercial awareness, including an understanding of production cost, inventory, budget constraints and sales-driven production planning.
- Current driver’s licence and forklift licence.

Remuneration and Benefits -
